Lately it has been a whirlwind of activities and projects that we must fulfill to get us to our next level. So, 9, Wednesday and I trek out to the van every night and enjoy the stars, drones, and midnight breeze to partake in a sliver of that outdoor adventure without leaving our home. It is stunning.

    Yes, something different in the suburb is stunning. Hamping. The ability to hear the night creepers, see the moon bounce about in confusion, and escape the daytime heat as it falls asleep cradled by the crisp nighttime chill – it’s all amazing.

    Seriously, it has been the best summer in a long time! It is amazing how much the pups enjoy it. We have come up with plenty of ideas to make our next adventure away from home even more care free and enjoyable. What better way to practice traveling in a van, then to almost live in it part time to determine what the needs and wants are?

    For parents, this is a great time to have sleepovers for kids and set up their own private oasis. When I was a youngster my hippy outdoor parents would set up our camp trailer for those overnight sleepovers. Being in the Sacramento area, I know my protective father would come out and check on us often as we lived in a busy area. It was a memorable experience and created wonderful memories. Kids will remember these things. To this day I still love chocolate peanut clusters, my mama’s homemade treat.

    Speaking of camp-style meals, I have a delicious recipe for you to try during your next hamping adventure. Roasted sweet potatoes and veggies are the perfect combination of hearty and healthy, making them an ideal dish to fuel your outdoor escapades. You can also make this for your fur babies, but take out the bell peppers, red onions, and spices. You could sprinkle some parsley though, as parsley is a nutritional spice.

    To make this mouthwatering meal, simply chop up some sweet potatoes, bell peppers, zucchini, and red onions. Toss them in olive oil, garlic, and pepper (or your own spice concoction), then spread them out on a baking sheet. Roast in the oven at 400 degrees Fahrenheit for 30-40 minutes, or until the veggies are tender and caramelized. Serve hot and enjoy the flavors of the great outdoors right in your own home.
